Heidi Fritz is the Healthcare Program Director with Greener By Default, consulting with institutions to apply behavioral science to menuing and food service operations in order to increase uptake of sustainable and healthy plant-based food while preserving freedom of choice. Her background includes working in the hospitality and catering sector as well as over 25 years as a Registered Dietitian in public health, where she managed projects ranging from healthy default beverage policy to workplace wellbeing and diabetes prevention initiatives. Heidi’s current work focuses on the intersection of healthy food and climate change resilience, and she also serves on her local sustainable food policy council in Denver, Colorado. When she’s not able to be outside in her garden or hiking in the mountains, Heidi can often be found in the kitchen experimenting with plant-based recipes.
